Did a great job of restoring my favourite knife - easy to use too!

I've never really been skilled enough to use a steel for anything more than light honing, and most domestic knife sharpeners are either ineffective or brutal...This is neither. This is subtle, controlled but powerful, and did a great job of restoring my favourite but sadly mistreated knife giving it a fresh sharp edge. It's surprisingly theraputic to use, and extremely straightforward since the blade is held still and at exactly the right angle by the magnet base, and the sharpening surface is held vertical by default. No more worries I'm making things worse.You can see this sort of tool at very high prices, but this seems to work fine and at £14.99 at time of review seems like good value to me.

Good quality, reasonably priced knife sharpener

I was sceptical that this rolling device would be effective in sharpening my knives but have to say I was proved wrong.Whilst the technique requires a bit of practising, the instructions are clear and easy to follow.The box includes a solid angle block with two angled ends. The 20 degree angle is recommended for use with Western made knives and the 15 degree angle for Japanese knives. There are pads attached to the bottom of the angle block that help to stop the block from moving around when in use.The second part is a solid rolling sharpener with two different coarse ends for sharpening. There is a plastic cover that fits over each end when the rolling sharpener is not in use to keep it clean and dust free.To sharpen a knife you place the knife on a solid surface with the blade facing upwards between the angle block, which is magnetic and the roller sharpener. You then gently roll the roller back and forth for 2-6 minutes and then turn the knife around and repeat.To make sure the edge of the blade is straight (honing) you then gently roll the 1000 grit side of the rolling sharpener back and forth 6-8 times and again turn the knife around and repeat this.I tested how effective the sharpener was by using an old knife that I knew was not cutting as well as it used to and cut a tomato with it before I had sharpened the knife and after. The blade sliced through the tomato much more smoothly and did not require any pressure.Overall this knife sharper requires very little storage space, is reasonably priced and works a treat.

Good Sharpener with Useful Angle Guides

I bought this rolling knife sharpener to help maintain my kitchen knives and it has been a useful addition. The wooden base feels well made and the magnetic guides hold the knife in a steady position while sharpening. The design is simple to use and does not take much practice to get comfortable with.The diamond and ceramic wheels work well together. The diamond side helps bring back the edge on dull knives, while the ceramic side gives a smoother finish. The 15° and 20° angle options are helpful for different types of knives, although it can take a few attempts to get the best results depending on the blade.Overall, this is a good quality sharpener that is easy to store and looks well presented in the box. It keeps my knives in better condition and is much easier than using traditional sharpening tools. It performs well, although achieving a really sharp edge requires some care and patience.

A clever rolling sharpener that brings dull knives back to life!

I ordered this sharpener as our kitchen knives had all gone hopelessly blunt, and it is a lovely thing to unbox, the wooden roller and angle block have a proper quality feel, and it comes in a smart gift box with a Japanese look to it. The idea is simple once you see it, the knife holds flat against the magnetic block, which has a 15° side for Japanese knives and a 20° side for ordinary kitchen ones, and you roll the wheel along the edge.The magnets are strong, so the knife stays put and the angle stays consistent, which is where I always went wrong with a steel. There are 2 wheels in the roller, a diamond one that does the sharpening and a ceramic one that polishes the edge smooth, and the results genuinely surprised me, my old cook's knife is slicing tomatoes cleanly again after a few minutes of rolling. It is steady and safe feeling to use too, with no flailing about.Overall, I would say it is fairly priced for the quality, and it would make a lovely gift for anyone who enjoys cooking. A clever rolling sharpener that brings dull knives back to life.

Rolling knife sharpener

I have a range of kitchen knives that I struggle to keep sharp. I have invested in a range of sharpeners over the years, including recently a whetstone. All have issues of various kinds. I was therefore keen to give this tool a go.It comes nicely presented and with clear instructions. The finish on the item is good, with Japanese symbols and covers for the two diamond sharpening stones. To test it I used the 20 degree end of the magnetic block, as per the instructions, since the knives were not Japanese knives. The knives hold well to the silicone pad on the angled block by means of the magnets in the block. I then rolled the sharpening stone along the blade and back using the 400 grit stone. I was surprised at the amount of filing that came off the blade (see photo). After turning the knife around and doing the other side, I used the 1000 grit end of the sharpening block to give a smoother finish. The rubber feet on the angled block help to hold it in place well while sharpening, but you do need to use one hand to hold it securely, with the other rolling the diamond sharpening block. Not much pressure is needed (nor can it easily be applied, since the blade will bend away), since the diamonds are very effective at their job. I would caution that it is best to do the activity on a tray or mat so that you catch the filings. I did not do this on my first attempt, with filings going on the table cloth.I was very impressed with the sharpness of the straight part of the blade, but I was not able to easily get the front (curved) part of the blade sharp. I have found this same issue with other sharpeners, so this is not a problem specific to this sharpener. By experimenting with various angles of blade and sharpener I was able to get somewhat of an edge on the curved part.I will need to use the sharpener more to get the best out of it, but so far I would say that the edge I have got on the straight part of the blades of a few knives (two carving knives and one paring knife) are impressive. As noted, the edge on the curved part of the blades is not as good, but better than before I sharpened them.This device is £9.99 (at time of review), which seems very reasonable given the effectiveness of it and appearance/talking point if given as a gift.

An almost perfect artisanal style knife sharpening kit

Despite some knife sharpeners of this rough design being poorly designed and made, this is not one of them. In use I found it near flawless for taking your time about getting a well honed and properly angled knife edge. Very clear step by step instructions are included in the box, and are well worth taking the time to study to get the best out of your rolling knife sharpener.As for things that usually trip up this style of knife sharpener, making them unusable and at times dangerous, this one passes with an almost flawless record. The quality of materials and finishing used is impeccable - and yes that is real wood, and well polished. The bearings run freely, with just a little friction as the kind used have rubber seals to keep damp and grime out of the bearing race, ensuring a long lifespan.The magnetic mounts for the grinding discs are detachable by unwinding them, though unlike many tightening them right down to get a hard lock on the thread does not bind the mechanism up preventing rolling of the sharpener as intended. The roller is also a satisfying to hold hexagonal shape (although some of the listing pictures at this time show a completely round one).When it comes to the sharpening process the blade is held in place by magnets behind the rubber on the angle block. This serves to keep the blade at the specified angle whilst you patiently work at the blade to hone it into shape. My only gripe here is that whilst those magnets are strong enough to encourage a gentle touch when grinding the blade, they should be significantly stronger for my tastes at least in being able to sharpen a little quicker when needed. This process is pretty easy when you get used to it, though in getting such excellent results a little patience is needed.The only other thing I would raise, is that whilst the included grinding plates are good quality and seem capable of lasting quite a while, I would like to see Kimura include a kit of replacement discs in the future - none are listed by them at this time, although other sellers have such things available which look to be a good pattern fit for these (look out for the ones with the same 'ear' notches).One of the good rolling knife sharpeners, well worth considering, and quite recommendable!

Great value and really nice quality.

I don’t see how I could give this any less than 5 stars. I have seen this type of knife sharpener before but usually closer to £40+. I have noticed cheaper versions lately though for about £20 and this Kimura Rolling Sharpener is half that! I wasn’t expecting much with such a bargain price but I was pleasantly surprised. The block and roller are both solid wood with embossed branding, nicely shaped, coloured and finished.The block has rubber, non slip feet, rubber protective ends with strong magnets underneath. The roller has a hexagonal shape which makes it easy to grip and roll. The ends rotate very easily and smoothly. The discs are removable (maybe replacements are available).If you haven’t used one of these before, I think it’s like a cleaner and easier version of whetstones. Like whetstones this takes more time than using one of the common drag-through sharpeners. Those scrape the and remove material quickly but with less finesse. This takes longer but gives a more refined edge. The little instruction leaflet included is very easy to understand.The block has 20° angle on one side (most common western knives) and 15° on the other (most Japanese knives). The knife attaches and is help in place by strong magnets. You then hold the block, place the roller alongside and run it smoothly and gently up and down the blade, starting with the 400 grit on both sides and finish with the 1000 grit.Overall, the set is very good and the quality seems much higher than the price tag suggests, so would make a great gift. The company offer a lifetime warranty. I'm not sure just how far that goes but they obviously believe in their product.

Brilliant!

This is an excellent sharpener. So easy to use and for the first time I have really sharp knives in the kitchen. I used to use a steel but this piece of equipment gets the edge really razor sharp. Preparing veg and meat is now much quicker and more efficient. Speeds up my cooking and reduces wasted time.

Works well.

This is very easy to use and the instructions are short and simple. I was able to get a very good edge on all my kitchen knives quickly as I do maintain them regularly. One extra thing you can do is to rub some tap water over the sharpening disc surface prior to use to get it damp. It does abrade much better when it’s damp. Good price too as I’ve seen them for over £40.

I have sharpened several kitchen knives with this system and was impressed by how easy it is to achieve a consistent edge.
