    Perfect for the price - 8 inch Gyuto

    I thought this would be a cheap knife that I wouldn't mind chipping while processing meat, but honestly, the quality has blown my mind.It's quite lightweight but also perfectly balanced for a pinch grip. The design is simple and elegant and wouldn't look out of place in any kitchen, from a family-run cafe to a Michelin-starred restaurant.The spine isn't rounded, but it has clearly been sanded to create soft edges that don't dig into your fingers. The knife is razor-sharp right out of the box.The only thing I can see that isn't perfect is that the handle bolster isn't completely symmetrical; however, that certainly isn't something you can feel when holding it.I would take this over the flimsy feeling Victorinox budget chef knives and day of the week. Quite honestly, I think I'm going to order the entire set.Thank you, Kimura, for surprising me with a very nice knife.

    A straightforward 8-inch chef knife that gets the basics right

    The Kimura 8-inch chef knife has the classic size and shape that makes this style of knife useful for a wide range of everyday kitchen preparation. An eight-inch blade gives enough working length for chopping vegetables, preparing meat and handling larger ingredients without being unnecessarily specialised.The Japanese-made design is also appealing if you prefer a traditional chef-knife format rather than collecting separate knives for every task. Quality, performance and value all matter with something that will potentially be used every day, and this has the simple, practical specification I would look for in a general kitchen knife.The only neutral point is that an eight-inch chef knife can feel larger than necessary for very small preparation jobs. For regular cooking, though, that same size is what makes it such a versatile all-round option.

    This is a beautiful knife, easy to hold and use. Blade very sharp. Perhaps it could come with a protective sheaf for the blade. Left unprotected can means you cut yourself by mistake.

    Recently decided not to buy new knives and bought this and a set of whetstones to effectively extend the lifespan of my knives.There are tons of options for these things so the quick summary is that this thing is well made and feels like it will last a long time it offers great value for money I’d highly recommend it.A honing Steel is used to realign the knife’s edge either before or after use, this ensures the knife stays sharper for longer. It’s important to understand that a honing steel doesn’t sharpen a knife. That said, it’s very easy to use, just run the blade along the steel like 4-6 times and you’re all good.Genuinely decent product, it’s worked well so far and it makes a real difference … in a professional kitchen they use these things constantly and have done for years, you can see why.

    bought this honing steel to replace my very worn one. It arrived quickly and is well packaged and works brilliantly. I must say I didn't realise there would be all this palaver ordering a knife sharpener as if paying by debit card there are all these age verification tings to do. I cold understand that were I buying a knife rather than a sharpener but hey-ho, this is how life is I guess. Brilliant product though! Definitely recommend.

    Well made but a bit of a lightweight overall.

    Through tang design, sturdy build … super sharp. But just a little too thin across the back of the knife to make it sturdy and not flex a little to much when more pressure is needed to make a cut…But for the money I shouldn’t expect the heft of a professional cheffing knife.

    It works

    Having had several steels over the last years each wearing out relatively quickly it was time to replace the last one.Having received our new steel I commenced sharpening our kitchen knives the intention being to use a knife sharpener to start then finish sharpening the knives with the new steel. NO NEED! I initially used the new steel on one of our knives and it sharpened a dull blade remarkably well considering the level of bluntness of the knife.The remaining knives were all sharpened this way with a good result from all the knives. (Both general use and good quality steel knives)With the lesser quality knives the steel could be felt gripping the knife as it sharpened it to a very sharp level.Overall I am impressed with the steel and it appears that it will have longevity of effective use unlike its predecessors.A good product!!

    Razor sharp out of the box

    Bought this to use alongside my 8 inch chef knifes which I sometimes find a bit too long and heavy.The knife is razor sharp out of the box from end to end. It does seem that you'll need to keep it honed often though as you can visibly see the edge rolling after about half an hour's work.If you're moving from an 8 inch to the 7 inches version of this you may need a bit of adjusting depending on the task at hand.It is a lighter than my other knives which is expected as it's smaller and the blade is thinner. This means that it does hurt you hands less after constant work.The balance is on the tang just before the handle which is just about right for me. The handle is a bit smaller than other chef knifes but it does feel comfortable at least for me.From a price point it's a bit more expensive than knives (a Richardson Sheffiedl and & Linoroso Comet) I use on a daily basis but it's nice having the made in Japan etching on the blade. I've even ordered another for a friend.
